Asparagus with Eggs and Parmesan Cheese

  • 1. Wash, trim and dry the asparagus.
  • 2. Pour a little olive oil into a frying pan and place over a medium heat. Add the asparagus and fry them, turning them regularly until they brown a little, approx 5 minutes. Turn off the heat, add the balsamic vinegar and toss through the pan. Cover and set aside.
  • 3. Pour a little olive oil into another frying pan and place over a medium-high heat. When the olive oil is hot, gently break the eggs into the pan and fry whilst spooning the hot oil over the eggs until the whites are cooked. Remove the pan from the heat.
  • 4. Place the asparagus onto a serving plate and pour the pan juices over the top. Add the eggs to the plate and finish with grated parmesan cheese (an amount to your liking), salt and pepper.
  • 5. Serve as a side dish or alone with fresh crusty bread.
