Lamb Rack with Warm Lentil Salad

With Autumn here and Winter creeping up on us, it’s time to start cooking some comfort food. This lamb rack with warm lentil salad is a healthy guilt free dish that will bring coziness to your dinner table.

  • 1. Pre-heat the oven to 200C (390F).
  • 2. Sprinkle the lamb rack with salt & pepper. Brown the lamb rack in a frying pan with 1 tbsp of the olive oil. Place the lamb into a baking dish and bake for 15 minutes.
  • 3. While the lamb is baking, finely dice the carrot, celery and onion. Peel and bruise the garlic, leaving the clove whole. Place the remaining tbsp of olive oil into the frying pan; add the carrot, celery, onion, garlic and sprig of thyme and cook on a low heat until translucent.
  • 4. Add the wine and cook for 1 minute. Drain the lentils and add to the pan along with the vinegar. Cook for a further 5-10 minutes to reduce the liquid in the pan to a sauce consistency. Season with salt and pepper.
  • 5. Once the lamb is cooked, cover with alfoil and rest for 5 minutes.
  • 6. To serve, cut the lamb rack into 4 pieces and plate with the lentils.
