Made with layers of coffee and liquor soaked sponge biscuits, mascarpone cream and cocoa or chocolate, tiramisu has the perfect combination of sweetness, creaminess and bitterness all rolled into a dessert that packs a punch which renders one into a state of utter contentment.   • 1. Separate the eggs and put the whites aside. Place the egg yolks and caster sugar into an electric mixer. Beat until pale and creamy. Add the mascarpone cheese and combine well. Place the mixture into a large mixing bowl.
  • 2. Beat the egg whites in a clean dry mixing bowl until soft peak. Add the egg whites to the cheese mixture and fold through.
  • 3. Place the hot coffee into a medium heatproof bowl and add the liqueur. Dip the biscuits into the coffee mixture and set aside on a large plate for a few minutes to cool.
  • 4. To layer the Tiramisu, cover the bottom of the serving bowl with biscuits. Add one half of the cream to the bowl and smooth over. Grate some chocolate over the top, then add another layer of biscuits. Spread the remaining cream over the biscuits and grate chocolate over the top. Cover and refrigerate until required.
